 RED MASOOR DAL WITH VEGETABLE SOUP


Ingredients:

  • Masoor dhal - 1/2 cup
  • Crushed Garlic - 3 flakes
  • Onion - 1 (chopped) 
  • Chilli sauce - 1 tsp
  • Fresh lime juice - 1/4 tsp
  • Spring onions - 1/4 cup (chopped)
  • Turmeric powder - 1/4 tsp
  • Carrots - 1/4 cup (chopped)
  • Capsicum - 1 small size (chopped)
  • Broccoli - 1 small (chopped)
  • Salt and Pepper to taste

For Garnish:

  • Croutons - 2 tbsp

For making Croutons for soups and shorba:

  • Butter - 2 tbsp
  • Small bread cubes - 1 cup
  • Garlic - 3 flakes
  • Chilli powder - 1 tsp
  • Salt and Pepper to taste

Method:

For making Croutons for soups and shorba:

Microwave safe flat dish add butter  for 20 seconds; toss 2 cups of small bread cubes with salt, garlic and chilli powder if desired, and microwave for 3 to 5 minutes stirring in between until browned. Let it stand until cool.

Wash masoor dal thoroughly and soak it for 30 minutes.

Microwave safe bowl add masoor dal and cook for 30 minutes at medium 80% power with turmeric powder, garlic, carrots, capsicum, broccoli and onion.

Cool and liquidize in a liquidizer. Microwave dal soup 10 minutes at medium 60% power and mix in the rest of the ingredients and serve hot in bowls and garnished with a 2 tsp of croutons in each bowl.
