VEGETARIAN MULLIGATAWNY SOUP
Ingredients:
- Malka dhal (Red Lentils) (Masoor dhal) - 1/2 cup
- Butter - 2 tsp
- Coconut milk - 3 cups
- Vegetable stock (or) Water - 1 cup
- Lime juice - 1 tsp
- Onion - 1 (chopped)
- Carrot - 1/4 cup (chopped)
- Capsicum - 1 (small size) (slice)
- White pumpkin - 1/4 cup (chopped)
- Turnip - 1/4 cup (chopped)
- Cummin seed powder - 1/4 tsp
- Ginger Garlic paste - 1 tsp
- Garam masala powder - 1/4 tsp
- Bay leaf - 1 (optional)
- Turmeric powder - 1/4 tsp
- Salt and Pepper to taste
Method:
In a microwave safe deep bowl add dhal, vegetable stock (or) water, coconut milk, onion, carrot, white pumpkin, turnip, capsicum , salt, pepper powder and turmeric powder at 100 % power for 30 minutes. Allow it cool and keep aside.
In a microwave safe dish add butter for 10 seconds add ginger garlic paste, bay leaf, cummin seed powder and garam masala powder and cook for 5 minutes. Mix in juice of lime.
Garnish with 1 tbsp of boiled white rice. Serve hot.
