 VEGETARIAN MULLIGATAWNY SOUP


 

Ingredients:

  • Malka dhal  (Red Lentils) (Masoor dhal) - 1/2 cup
  • Butter - 2 tsp
  • Coconut milk - 3 cups
  • Vegetable stock (or) Water  - 1 cup
  • Lime juice - 1 tsp
  • Onion - 1 (chopped)
  • Carrot - 1/4 cup (chopped)
  • Capsicum - 1 (small size) (slice)
  • White pumpkin - 1/4 cup (chopped)
  • Turnip - 1/4 cup (chopped)
  • Cummin seed powder - 1/4 tsp
  • Ginger Garlic paste - 1 tsp
  • Garam masala powder - 1/4 tsp 
  • Bay leaf - 1 (optional)
  • Turmeric powder - 1/4 tsp 
  • Salt and Pepper to taste

Method: 

In a microwave safe deep bowl add dhal, vegetable stock (or) water, coconut milk, onion, carrot, white pumpkin, turnip, capsicum , salt, pepper powder and turmeric powder at 100 % power for 30 minutes. Allow it cool and keep aside.

In a microwave safe dish add butter for 10 seconds add ginger garlic paste, bay leaf, cummin seed powder and garam masala powder and cook for 5 minutes. Mix in juice of lime. 

Garnish with 1 tbsp of  boiled white rice. Serve hot.
