 BEETROOT SOUP


Ingredients:

  • Cooked Beetroot - 250 gm (chopped)
  • Cooked Carrot - 100 gm (chopped) (optional)
  • Olive oil - 1/2 tbsp
  • Red onion - 1 (sliced)
  • Vegetable stock - 2 to 4 cups
  • Garlic - 3 flakes (finely chopped)
  • Cooked pasta - 1/2 cup
  • Lime juice - 1/4 tsp
  • Roasted cummin seed powder - 1/2 tsp
  • Salt and Black Pepper to taste

Method:

In a sauce pan add olive oil, onions and garlic. Cook for 3 minutes.

Add cooked beetroot, cooked carrot, cooked pasta ,cummin seed powder, vegetable stock, and lime juice and cook for 5 to 10 minutes. Season according to taste.

Garnish with fresh cream or hung curds and sprinkle with finely chopped coriander leaves. Serve hot.
