BOUILLABAISSE

Bouillabaisse is a traditional french fish soup.



 Ingredients:

  • Shell fish or Salmon fish or Mixed fish  - 500gm
  • Fish stock or water - 5 cups
  • Onion - 1 (sliced)
  • Garlic - 5 flakes (crushed) 
  • Tomato paste - 1/2 cup
  • Lime juice - 2 tbsp
  • Soya sauce - 1/4 tsp
  • Worcestershire sauce - 1 tbsp
  • Red chilli powder - 1/2 tsp
  • Cummin seed powder - 1/4 tsp
  • Saffron - 1/4 tsp
  • Salt and Pepper to taste  

For Garnish:

  • Spring onions - 2 tbsp (chopped)


Method:

Wash fish and cut into bite -size pieces and apply salt and 1 tbsp of  lemon juice and keep it for  10 minutes. 

In a microwave safe bowl pour water or fish stock and saffron cook for 5 minutes , until it comes to a boil. Stir in all the ingredients except the fish and let it stand for 2 to 3 minutes.

When ready to serve add marinated fish pieces into broth, cover and microwave for 10 to 15 minutes. Garnish with spring onion.

Serve the fish soup with saffron rice.
