BOUILLABAISSE
(Bouillabaisse is a traditional French Fish Soup)
Ingredients:
- Fish and shell fish - 500 gm (Cleaned and cut into small pieces and salted)
- Olive oil -100ml
- Large pinch of Saffron
- Onion - 1 (sliced)
- Red pepper - 1 (sliced)
- Garlic - 4 flakes (crushed)
- Cumin seed powder - 1/2 tsp
- Tomato paste - 1 tbsp
- Fresh lemon juice - 1/2 tbsp
- Black pepper - 2 tsp
- Fennel - 1 tbsp
- Worcestershire sauce - 1 1/2 tbsp
- Salt to taste
For Garnish:
- Spring onion - 1 tbsp (finely chopped)
Accompaniments:
- A bowl of White Rice (or) Saffron Rice
Method:
Wash fish and apply salt and lemon juice (1tsp) keep for 10 minutes.
In a microwave safe dish, add water or fish stock and saffron. Microwave at 80% for 5 to 8 minutes until it comes boil.
Stir all ingredients except the fish and let it stand for 5 to 10 minutes.
When its ready to serve add fish pieces into the broth, cover and microwave for 5 minutes.
Serve the fish soup with the accompaniments as desired.
