 BOUILLABAISSE 

(Bouillabaisse is a traditional French Fish Soup)


Ingredients:

  • Fish and shell fish - 500 gm (Cleaned and cut into small pieces and salted)
  • Olive oil -100ml
  • Large pinch of Saffron  
  • Onion - 1 (sliced)
  • Red pepper - 1 (sliced)
  • Garlic - 4 flakes (crushed)
  • Cumin seed powder - 1/2 tsp
  • Tomato paste - 1 tbsp
  • Fresh lemon juice - 1/2 tbsp
  • Black pepper - 2 tsp
  • Fennel - 1 tbsp
  • Worcestershire sauce - 1 1/2 tbsp
  • Salt to taste

For Garnish:

  • Spring onion - 1 tbsp (finely chopped)

Accompaniments:

  • A bowl of White Rice (or) Saffron Rice

Method:

Wash fish and apply salt and lemon juice (1tsp) keep for 10 minutes.

In a microwave safe dish, add water or fish stock and saffron. Microwave at 80% for 5 to 8 minutes until it comes boil.

Stir all ingredients except the fish and let it stand for 5 to 10 minutes. 

When its ready to serve add fish pieces into the broth, cover and microwave for 5 minutes. 

Serve the fish soup with the accompaniments as desired.
