 CHINESE TUM YUM SOUP

Ingredients:

  • Onion - 1 cup (chopped)
  • French Beans - 1cup (chopped)
  • Carrot -  1cup (chopped)
  • Cabbage -1cup (finely chopped)
  • Capsicum - 1/4 cup (chopped)
  • Mushroom - 1/4 cup (sliced)
  • Butter -2 to 3 tbsp
  • Garlic - 4 to 5 flakes (chopped)
  • Cloves - 2 to 3
  • Dry Red Chilli  - 2
  • Tomato Sauce - 2 tbsp
  • Soy sauce - 1 tbsp
  • Fresh lime juice - 1 tbsp
  • A pinch of Ajinomoto  (optional)
  • Spring onion for garnish
  • Vegetable Stock or Water - 2 to 3 cups
  • Salt and pepper  to taste

Method:

In a large deep microwave safe bowl, add butter, put chopped onion , red chill and garlic for 2 minutes at power 100%.

Add chopped vegetables, 1 cup of water and salt and microwave covered till the vegetables are tender but crisp.

Now add the rest of the ingredients and 3 to 4 cups of water or Vegetable stock and microwave for 8 to 10 minutes till it boils. Remove from microwave transfer to soup bowl. Garnish with spring onion.  Serve hot.
