How to make Vegetable Stock? - Soup Recipes - Recettes de Soupe - Recettes de Bouillon - Viji's New Recipes
VEGETABLE STOCK
Ingredients:
- Butter or Olive oil - 1tbsp
- Onions - 2 (chopped)
- Carrot - 3 (chopped)
- Celery - 3 stalks (chopped)
- Leek - 4 tbsp (chopped)
- Parsley - 2 stalks (chopped)
- Garlic - 8 to 10 flaks
- Cloves - 8 to 10nos.
- Bay leaf - 2
- Black pepper corns - 1 tbsp
- Thyme - 5 springs (chopped)
- Strip of Lemon peel (optional)
- Salt and pepper to taste
Method:
Put all the ingredients and 3tsp of oil into a large sauce pan or soup pot with about 2litres water . Bring to boil then cover and leave to simmer until the vegetable are soft 20 to 30 minutes.
Remove from heat leave to cool.Strain through a sieve and keep in a covered container in the refrigerator. Use a batch of stock within one week or freeze in small amounts and use as required.
